Easter Egging!

Last night when we went to lock up the house for the night, we found two buckets and two kites on our front porch. They had notes addressed to Prissy and to G'man! Indicating eggs had already been laid down and were waiting for the kids!
We'd been Eastered! A surprise Easter Egging!

Now before you wonder - yes I am that lucky, and yes I have some very amazing loving people in my life, as well as in my kids lives!
This morning while the kids hunted eggs, mama and papa hunted the givers! Our very good friends Shayne and Sara played Easter bunny and gave our kids much more than just candy! They have been smiling and feeling so very extra special today!

Also we finished painting the chicken coop and worked more on the outside fence. They are getting so large they will need to be able to run around the day coop soon!

Yesterday and today we worked on backyard projects. Hubby tilled the entire back garden. We fixed the tiller and ran into my besties sister - which is a whole other story.
Due to the amount of spring work we've been trying to get done, we had a very simple quite Easter dinner.
Here is the recipe and photo of dinner!

Whether you celebrate Easter or Passover I pray today was blessed and full of love.

Blizzards and Family

Its a blizzard out side so I tell the hubby its his turn to get the boy.
He says, "I wouldn't know where to get him."
I say, "What would you do if I break my leg or get in an accident?"
He says, "Drive carefully!"

So I went and got G'man in the snow, car's sliding all around, half the cars are driving without their lights on.
Visibility is 20 feet max.
I get there, get the boy, clean the car off again - as it was covered again in the 3 minutes it took to get him.
On the way home I'm yelling at all the cars that are driving like idiots.
Then a large WHITE truck is driving toward me I can barely see it at 10 feet away because aha! it doesn't have its lights on!
Yeah they win the prize - the your the dumbest idiot on the road prize, lets drive in a blizzard, in a white out, in a white car without our lights!
Brilliant.

Two hours later when its time to pick up Prissy from the after school program... yeah hubby does it.
I take the photos above, go back inside and get comfortable. 3 minutes later hubby calls me to come out side to help him get the van out of a snow bank!
Luckily he only got stuck the once, but he did have to take the long way to pick her up.
Now finally my whole family is home and safe!
As of this moment we almost have a foot of snow in just 3 hours! Most of it being dumped in the last hour in a half.

As for the hubby health update

Yesterday - hubby saw the new doctor. The CT was a much clearer photo, he has ONE kidney stone its not 11.8 instead its 8.8 and its not obstructing anything. So its not causing the pain.
Doctor thinks its due to hubbies weight and previous back surgery.
Not (like the other doctor) that the surgery area is having issues ie a screw loose, but that due to his having fused the lower sections of his back and still being over weight that the vertebra above the surgery area is now also being pulled out of alignment and may need another surgery.

Today - hubby (before the snow storm) hubby went for an MRI with contrast to check his back.
So we will see soon if its his back or if we are still searching for answers.
Thankfully this doctor seemed much more tuned in.

Also if you live in an area like or near mine you might want to try a new family favorite recipe
Oven Chili Cheese Dogs - check it out!

Homeopathic Prissy

My poor little girl. Always the luck!
She has allergies to allergies.
She is allergic to some of the oddest, random things.
Also sad to say out of my two children she got my fair skin, while Little Man got papa's more ethnic non-burning skin.

I know you want to know what allergies and burns have to do in common...

This is one of three Aloe Vera Gel that I was able to find in my house.
Notice the second line... Sunburn pain relief with LIDOCAINE HCI?
Yup my girl is severely allergic to Lidocaine HCI.

So until I can buy an aloe plant to have on hand I've had to research Homeopathic recipes and ways to cure sunburns naturally.
Now I am not against Homeopathic - quite the opposite - I just find it ironic that I don't have many choices when it comes to her anymore.
She will have to learn much of this as she grows up.

Black tea on the skin.
As homeopathic remedies go I have to say this one smells good.
Soak a few tea bags in hot water - allow to cool until tepid.
Soak a cloth (that you don't mind getting stained) and apply to burnt areas.
Allow it to soak in - repeat as many times as needed - don't wash off or wipe away allow to dry.
If the burn is on a hard to reach area - like your back - you can pour the tea over your body while sitting in the bathtub. Full Recipe HERE.

 Despite all of her issues
She really is amazing and an amazing artist!

Organizing my Chaotic Life

There are a few areas of my life that I have been "winging" successfully for the last ten years. Dinner preparation falls into that, house hold chores falls into the unsuccessful category.
Pinterest (thank you for coming into my life) has given me many great ideas.
Some from people that really, really, really, love paper - I mean WAY to many different organizing sheets.
Too many means that one day you will overlook or forget to check one.

Here are a few from different blogs & Pinterest that spawned my new system, at the bottom I will link and explain my system at the bottom. ;)

First up - Home Management
This one REALLY likes to pay for things you print off AND all her links are no longer valid - however the idea is solid.

Next up is Sunday Planning, again she really likes paper.

After her came the Magnetic Menu Board.
This one is sure genius! I love this idea
Although my idea is cheaper and simpler I took a lot from her.

Lastly came Girl Loves Glam - funny enough the least glamorous of them all but still very functional.
If you are looking to organize your life a little more these women have some great ideas!
Mine is a much simpler, much cheaper way to do many of the combined.

First off I have only one binder. My sister bought me a very nice recipe keeper set a few years ago. Ever since then its been used to hold our "family favorite" recipes.

It has plenty of space, many tabs and is a 3 ring binder. For me and what I want, its perfect.

Here is a bad photo of my weekly calendar

This sheet has my menu plan, weekly family schedule, holidays, moon phases, & house cleaning chart.
Color coded to event or person.

Here is my Monthly calendar

I found a free site called, Keep & Share, where you can save several printable calendars.
You can even schedule things weekly, monthly ect.

Sorry for my bad hand writing. I had to write up this list and place next to my calendar so that I can schedule my menu plan off of it. See I have recipes and then I have "recipes" things that I make so often that I don't need a recipe card.

When planning a menu a month in advance you may need a "reminder" list. Something to help you remember old favorites or your general back ups.
This list I am sure will grow and be added to, I have plenty of room saved up on the back for more.

Another great idea when menu planning is to make sure that similar ingredients be used in the same week.
I have a week where I make burritos, tacos, nachos, salad ect.
Since most of those recipes re-use the same ingredients. Insuring no waste and maxim food for your budget.

Which ever organizing idea is for you or if like me you pick and choose and find something that really works for you, I hope this helps.

Home Made

For all those that follow this blog or my food blog - you know that over the last 8 months I have begun the road to waking up. Walking out of depression and into who I was before.
Now that I am more alert, awake, my house is relatively clean, I finally have time to start up something I have ALWAYS wanted to do.
Start making my own products at home. Everything from Laundry Soap to Ant Killer. I have done several small things already like my Home Made Bug Spray.

Collars and Fun

My fur baby!
A few days ago he got scratched by a cat (or skunk or raccoon)
Since it was on his face and he won't stop scratching it.
He now has the inflatable collar!

On the plus side
while my fur baby HATES the rain and will do anything to avoid it
he LOVES the snow!
Even with his collar he still managed to bunny jump through the snow!

Loving my new camera!
I spent the day making homemade applesauce from my fathers homegrown apples!

Shed update and Dragonflies!

Alright I am going to do some very quick updates!

Shed - the shed now has to dutch style doors completely done! We also finished off one loft!

Dragonflies - our yard (only our yard) has been awash with thirty to forty dragonflies almost every non raining evening! I love dragonflies! If there were one magical animal, one thing that inspired fairy tales, I would know it was the dragonfly!

The Path to Me - I finally started my meds and was happy to find that weight loss could be a side effect - lets all cross our fingers and PRAY that happens!
I haven't noticed much difference save the fact that I am more alert.
Yes I know this all takes time but seriously if you don't know this by now or are new to my blog - I don't do patience.
People used to pray God would give me patience he gave me the most patient of husbands  - I took it as a sign - its just not in my makeup.

We are going to be putting up the fence and possibly the arbor in the new two days! I will try to get photos up!

Also check out - Home made Honey Mustard Dressing! Especially if you like my new photo collage!

Writing Desk

I am sure that once or twice on this blog I have mentioned my love of IKEA that has in no way lessened nor do I ever see that changing in the future.
The desk above is a Secretary desk that I am in love with! I want this in my new soon to be bedroom!

This sits on top giving you more room for your writing, scrap booking and supply items that you may want to store along with any bills and misc things.

This bench is super cool - its padded, fits perfectly under the writing desk and open up underneath for easy and handy storage!

If any of my friends and family want to get me the perfect Christmas present it would be a gift card to IKEA! This is on my want list not my need list so it will be several months to a year before I will be the proud and happy owner of this set!

I also went to IKEA and found a 365 recipe book that is on a final sale of $3.50 after one short day of looking at this tiny book I am in HEAVEN! YUM!

ps. I am in no way paid to advertise, promote or review any products I do so from my own personal beliefs, uses and observances.

Mint! How I love Mint!

I borrowed this picture from the web as my mint plants well to see what they look like scroll down farther.
For now we are going to concentrate on MINT!
And of course what to do once you have nice healthy plants.

Menu plan

Minty-watermelon cucumber salad
Zesty herbed lamb chops
grilled fruit skewers with chocolate syrup

(all recipes from my healthy cooking magazine)

I believe I mentioned in a recent post of mine how hard it is to grow mint from seeds right?
Yeah this is after a months effort.

My poor things...

For me to handle the cucumber salad I have to first freeze the cucumber since I am highly allergic to a protein in the food.
This is annoying to be sure but it's easily broken down by freezeing, cooking, drying or pickling.
I can have it any way but fresh - yup sucks.

These recipes are very easy to find online so I will only post my favorite

Zesty Herbed Lamb Chops

1/2 c fresh mint leaves
1/4 c minced fresh oregano
1/4 c fresh parsley sprigs with the stems removed
1/4 c lemon juice
3 Tbls water
6 garlic cloves
1 Tbls olive oil
1/4 tsp salt
8 lamb chops (two per person)
1/2 tsp salt
1/2 tsp pepper
1 Tbls olive oil

In a food processor combine the all ingredients until the lamb chops (obviously).
Set aside half the sauce.
Brush 1/2 sauce over chops sprinkle with the salt and pepper.
In a large skillet (or grill) cook chops in oil over medium heat for 7-10 minutes on both sides of the meat.
Serve with the remaining mint sauce.

Great accompaniment for this dish is a mint cuscous.
Also taking a friends advice I bought the Hungry Girl cook book 200 recipes under 200 calories.
This was a major disappointment.
NOTHING is fresh!
This book will be shelved until the dead of winter.

Creole Broccoli

Ok he is just the cutest thing ever!!! (When he's sleeping)

Ok so the container says cajun but really the spice inside is Creole and here is the recipe for how to make creole seasoning at home

1/3 C paprika
1/3 C salt
1/4 C garlic powder
1/4 C pepper
1/8 C onion powder
2 Tbls cayenne powder
2 Tbls oregano
2 Tbls thyme

mix and then put into a container. If you have a Winco store near you buying these ingredients in bulk really helps keep the cost down. I made it for less than two dollars.

What we do is we add a ton of broccoli to a hot pan with two tbls of olive oil get it hot and then add two tbls of creole seasoning to the broccoli.

Then serve! Its easy, yummy and best of all works well with my hubbies medifast diet. So far he has lost 40 pds in a little over a month.
This is my hubbies favorite way to eat broccoli now and I will tell you its addicting!

Wassil or Russian Tea

Ok this is a long story but when I was growing up my Mama was given a Wassil mix from our neighbor as a Christmas gift. We loved it so much that Mama asked for the recipe our neighbor then explained she had bought it from a co-worker who had since then quit. After that both mama and our neighbor started trying out different recipes for this fabulous drink.
Several years and many recipes later they both fell in love with this recipe.
Which is made using easy to get American ingredients (nice for me since this is very popular in Sweden, Russia ect) the first couple of recipes they tried had harder to get ingrediants.

When its almost done but not mixed it looks like this!

Helpers are a must!

My math when I make more then my normal recipe :) I try to make enough to last me one full year or enough for me to gift away to others for Christmas along with the recipe of course.

When its all mixed up it looks like this!

Then add around 2 tbls to a large cup of hot water.

Stir and enjoy!
Yummmmm

Wassil or Russian Tea Recipe

3/4 cups Instant Tea
1 pkg Jello (any flavor) I prefer the new tropical fusion however orange or lemon work well too)

1 tsp Allspice
1 tsp Cloves

The hubby is doing well after his surgery, while his pain is increasing and he still can't talk above a whisper he is very happy its over and that he is home; and I am very happy that I have some time with my hubby and family for the holidays.

DRAMA & Whoopie Pies

The story starts two years ago we needed to move from our apartment to an allergy free home.

We found a mobile home in a nice mobile park that became a safe haven for our daughters severe cat & smoke allergies.

We have worked hard fixing up the inside, taking care of problems as they came along but for the most part we had a friendly relationship with our park manegement --- til last month.

After finally being able to buy a new mattress we moved our old mattresses out onto the porch and contacted management to find out if they still offered trash pickup (something they offered as part of park services when we moved in 2 years ago). Turns out that while they have raised park lot fee's 20 dollars a month in 2 years they have lowered the services we recive from the park.

Instead what we recieved was a "friendly reminder" that our mattresses needed to be properly removed.

Within two days we were able of course to remove them and continue on with life right? WRONG our mobile home office management team decided to invade our property (Renters Rights Violations all over the place) take pictures of our property and then send us a 7 day clean or EVICT notice - what for right?? A wagon & two bikes that you can not see from the front of our home and my CHILDRENS TOYS on our front porch - all 5 toys. --- Not kidding. Since our mobile home's Property lease is up in June our first response was to try to move into a new home by June but while the rest of the country is having major cheap houseing I was unable to find a nice home for under 150K, so our new plan is to stay for another year save up every dime, hubby is going to work over time and we will move next spring hopefully for the last time for a long time.

We have also given the office in writting a warning that they walk onto our property without written warning that we will have them ticketed and/if needed removed from our property by the police, needless to say we have talked with 3 lawyers and the local PD.

So if you are ever in the market looking for a mobile home put this place on your list of NOTS.

MEADOWBROOK VILLAGE 1240 HUMMINGBIRD ST, SALT LAKE CITY, UT

Manager Teresa Wolfe.

Since I have been dealing with such ridiculous stress from some pathetic life forms I need a stress break hence Whoopie Pies!!

Maybe you have noticed this wonderful growing trend or have been reading up on these in the news they range in different flavors, sizes and fillings but they sound yummy!!

So I am adding in some of the recipes I found
Whoopie Pie
Time: 1 hour / yield 6
FOR THE CAKES:
1/4 pound (1 stick) butter, at room temperature
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 teaspoons baking soda
1 teaspoon sea salt
2 cups all-purpose flour
1/2 cup cocoa
1 cup buttermilk
FOR THE BUTTERCREAM FILLING:
3 large egg whites
3/4 cup sugar
1/2 pound butter (2 sticks), at room temperature
3/4 teaspoon vanilla
1/4 teaspoon sea salt.
1. For the cakes: Preheat oven to 350 degrees. In a mixing bowl, cream together the butter and brown sugar. Add the egg and vanilla extract and beat until light and creamy. In a separate bowl, whisk together the baking soda, salt, flour and cocoa. Add dry ingredients to butter mixture in three parts, alternating with buttermilk, and combining well after each addition.
2. Using an ice cream scoop or a spoon, scoop out 12 1/4-cup mounds of batter and place about 6 inches apart on a parchment-lined baking sheet. Bake until tops are puffed and cakes spring back when touched, 12 to 14 minutes. Remove from oven and cool completely before filling.
3. For the buttercream filling: For best results, follow directions carefully, paying attention to required temperatures. Fill bottom half of a double boiler (or a medium saucepan) with an inch or two of water, and bring to a boil over high heat. In top half of double boiler (or a metal bowl), combine egg whites and sugar. Place over simmering water and whisk just until sugar is dissolved and temperature reaches 180 degrees on an instant-read thermometer.
4. Using a whisk attachment on a heavy-duty mixer, whisk egg whites and sugar on high until they double in volume and become thick and shiny. Continue to whisk until cool. Reduce speed to medium and begin to add butter about 1/2 tablespoon at a time, until all the butter is incorporated. Add vanilla and salt. If mixture looks curdled, continue to whisk until it is smooth. Increase speed to high and whisk for 1 more minute. Use immediately or place in an airtight container and chill for up to 3 days, whisking buttercream again before using.
5. For assembly: Using an ice cream scoop or spoon, place 1/4 cup buttercream on flat side of each of 6 cakes, spreading it to edges. Top filled half with another cake to sandwich the buttercream. Store in an airtight container at room temperature for up to 3 days, or wrap individually and freeze for up to 3 months.

Weight loss

In one of my earlier blogs (Nov. 20th) I went through how to diet by only staying between your "magic" numbers.
~~ how many calories a day you can eat and still lose weight~~

I found staying below my set 1600 was easy staying below 100% of my daily salt intake has been the hard part.
At that time I had only been losing about 10 pds a year since my massive gain of weight with my health problems during my first pregnancy and my mother death (in which I gained a ton) I was a size 22 pants and a xxl top.
Less then 2 months later by following my number diet (which is eating less or healthier depending on the day) I am now a size 18 pant and a xl top.
The only exercise I have done as been infrequent and only for toning -to bring in the loose flab.

I have more energy, I feel more awake and I feel so much better about myself its a huge difference! So if you have been putting off losing those extra pounds because you think its going to be too hard I advise this - its easy and it works- if I can lose this much weight during the holiday season then anyone can lose weight by following their numbers.

My husband did not join me on this and in fact he gained 20 pds while I was losing so he is now on my "Magic number" diet and we will see how well he does.
In the main picture I was down to a size 20 I have lost another two inches since then and should continue to lose.

About Concordance™

1.Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix refried beans, tomato sauce and fajita seasoning mix. Stir in chicken.
2.Spread 1/2 cup of the bean mixture over bottom of baking dish. Arrange 4 tortillas, overlapping if necessary, in baking dish. Top with half of remaining bean mixture, half of the stir-fry vegetables and 1 cup of the cheese. Repeat layers with remaining tortillas, bean mixture, stir-fry vegetables and cheese.
3.Cover baking dish with foil. Bake 30 minutes. Uncover; bake 15 to 20 minutes longer or until hot and bubbly. Let stand 5 minutes before cutting.
High Altitude (3500-6500 ft): Bake covered 35 minutes. Uncover; bake 10 to 15 minutes longer.

~~~Now for the recipe above the main bad thing in here is the salt so any of the cooking options you can find that have a low salt alternative add it in, the second problem is the cheese however as long as you shred* your own and just watch the rest of your fat for the day you should be able to have this just fine.
* Cheese that comes pre shredded has been coated with a chemical to keep it from turning into a big mushy ball of cheese.
