Kids & Breakfast


So look who came to town its the friendly neighborhood spiderman! LOL got to love my kids they are just so cute. Wednesday we went to Zoo Lights with the grandparents and the kids had a great time. My Dad and Diane loved seeing our Amur Tiger and her triplets play and boy did they play!


So question If something makes a great man then what does a great man make?

Hahahah story is still coming along and I am still working on it everyday. Sorry I have not been on so much I will try to post more often.

My News

Sorry I have not been on for a while, between the holidays, family time, my hubbies recovery and my most recent fascination I just have not had a lot of time.

So my big news I am writing a book! Ok so I have been trying to write since I was 15 and while my imagination is more fertile that you could ever imagine I have always had a hard time writing things the way I want them to come out. So you see and hear what I see and hear however I have started a fresh attempt. Something I am very excited about so far I have a good solid 9 pages!
However after one week and about 7 revisions I finally have 9 good pages with lots more to come. Even my husband thinks this one has promise.

So if you were wondering if I fell in a hole or jumped off a cliff the answer is nope I just have disappeared inside my head for a while.
Here's hoping I can get this book finished whether anyone publishes it or not I would like to finally be able to end one of my stories.

This word speaks to me in so many ways and I am sure it will speak to all who read it.

Pumpkin Cheesecake



PUMPKIN CHEESECAKE
2 2/3 c. Weight Watchers lowfat cottage cheese
1/2 c. Weight Watchers nonfat plain yogurt
1/4 c. granulated sugar
2 egg whites
1 tsp. vanilla extract
1 c. canned pumpkin (no sugar added)
1/3 c. frozen apple juice concentrate, thawed
3 tbsp. all-purpose flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
Place first 5 ingredients in food processor; process until smooth, about 2 minutes. Add pumpkin and remaining ingredients; process until combined. Pour into a 9-inch nonstick pie pan; bake in preheated 350 degree oven for 1 hour. Let cool. Cover; refrigerate until firm, at least 5 hours or overnight. Makes 8 servings.

SERVING SUGGESTION: Drizzle 1 oz. melted chocolate over finished cake. Decorate as desired with 1/4 cup whipped topping.
